Strawberry Shortcake



Happy Valentines Day! In the spirt of this special day, I decided to make a dessert that was sweet, delicious, and utilized the lovely red strawberry. I really enjoyed making this dessert because it was quick to prepare, fast to bake, and easy to assemble. You know what that means, since it is easy to make, you can eat it even faster. I would love to hear what your favourite dessert to make, eat or get for Valentines Day.

Strawberry Shortcake

Ingredients:

For the Fruit Layer and Topping 
  • Strawberries 
  • 6 tbsp Sugar 
  • Whipped Cream
For the Shortcakes 
  • 2 cups  All Purpose flour, plus more for dusting the work surface 
  • 5 tbsp Sugar 
  • 1 tbsp Baking Powder 
  • 1/2 tsp Salt 
  • 8 tbsp cold unsalted Butter 
  • 1 large Egg, lightly beaten 
  • 1/2 cup plus 1 tbsp Whole Milk 
  • 1 large Egg white, lightly beaten  
Method:
  1. Slice the strawberries. Put the strawberries into a bowl and add sugar. Stir to combine and let it sit for 30 minutes
  2. Heat the oven to 425 F.
  3. In a bowl, combine the flour, 3 tbsp of sugar, baking power and salt
  4. Add butter into the flour mixture and break into little pieces until it resembles a course meal
  5. In a separate bowl mix the beaten egg and milk
  6. Pour the milk and egg mixture into the flour
  7. Combine the mixture and lightly knead the dough until it comes together
  8. Flatten the dough and cut out the dough
  9. Place the cut out hearts on a baking tray. Then brush the tops with the beaten egg white and sprinkle remaining sugar
  10. Bake until the shortcakes are golden brown, for about 12-15 minutes 
  11. Let the shortcakes cool for 10 minutes and cut in half. Add the whipped cream and strawberries on the cake bottom and cap it with the cake top.
Please excuse my different shaped hearts, they were all hand cut.
